Dickey's Barbecue Pit plans move forward

PLATTSBURGH — Plans to bring a Dickey's Barbecue Pit to the Town of Plattsburgh have taken a large step forward.

WPTZ meteorologist Jim Moore and Plattsburgh native Ryan Tolbert have signed a five-year lease for 2,000 square feet of space in Perrywinkle's Place, next door to General Trading Company on Smithfield Boulevard.

"We're shooting for Sept. 8," Moore said, noting that is a target date and may be subject to change.

He said they plan to have about 10 employees.

Dickey's Barbecue Pit offers Texas-style barbecue.

"That's something we don't really have in Plattsburgh," Moore said.

THOROUGH TRAINING

Travis Dickey opened the first Dickey's Barbecue Pit in Dallas in 1941. The company started to offer franchising opportunities in 1994.

As of May, there were 146 locations in 33 states. The company opened one in Queensbury earlier this year.

Tolbert and Randy Saucier — who will be general manager at the Plattsburgh restaurant — are at Dickey's headquarters in Dallas for three weeks of extremely thorough training, Moore said. He said his last day as a meteorologist at WPTZ will be Friday, Aug. 12, and he will undertake the same training starting Aug. 20.

"You pretty much learn everything about the restaurant," Moore said.

MANY CHOICES

The Dickey's Barbecue menu features sandwiches or meat plates. Meat choices include pulled pork, beef brisket, ham, turkey breast, chicken breast, Polish sausage, hot links and pork ribs.

The meat is slow-cooked over hickory wood overnight and comes out "as tender as possible," Moore said.

Side dishes include waffle-iron fries; coleslaw; onion tanglers; green beans with bacon; potato salad; barbecue beans; jalapeno beans; fried okra; macaroni and cheese; baked-potato casserole; a variety of stuffed baked potatoes; chicken caesar salad; and salad.

Sandwiches can be garnished with jalapenos, barbecue ranch sauce, shredded cheddar and three flavors of barbecue sauce.

Beverages are served in large bright-yellow plastic cups and include free refills. Any food or beverage order entitles the diner to free soft-serve ice cream.

FAMILY FRIENDLY

Dine-in and take-out service is available. Moore said they tentatively plan to be open from 11 a.m. to 9 p.m.

Children 12 and younger receive a free meal with every adult dinner purchased on Sundays.

"We plan to have a very family friendly atmosphere," Moore said.

He said Tolbert is in charge of construction details.

They plan to have several televisions in the restaurant for viewing sporting and other special events.
